I believe that the way to anyone's heart is a plate of savory shoestring fries. One can never go wrong with it. Aside from its usual savory crispiness, shoestring is versatile and can go with almost anything. In fact, you can also experiment with it and cook it anyway you like. As a gift to all of you my dear valuable readers or should I say shoestringers (it's a working progress, okay?), I decided to try 2 intriguing recipe variation: Shoestring Fries with Truffle Aioli and Spicy Curry Duck Fat Shoestring Fries.

I did cook these for 2 consecutive weeks last month and both are totally winners because they go well with almost anything. It would be an understatement to say I'm shocked; it goes above and beyond what I could have imagined. I’m so glad I had the guts to explore and that I got such a wonderful reward.

The Weird: Spicy Curry Duck fat Shoestring Fries

For the eccentric try these spicy curry duck fat shoestring fries. My investigation into the realm of potent flavors started with Paleo OMGs Spicy Curry Duck Fat Shoestring Fries. The rich flavor of duck fat is like a hug for your taste buds which is why I was drawn to this recipe right away.

Method Madness

To help the fresh potatoes crisp up beautifully I first soaked them in cold water and then cut them into thin shoestrings. After giving them a thorough soak which is an essential step I drained and patted dry. After that I melted some duck fat (yes you read that right) and mixed my fries with a generous amount of curry powder. The next step was to bake them until they were golden.

A riot of flavor

I had to start eating these fries as soon as they came out of the oven because of their enticing aroma. I must admit that the first bite was a flavor explosion. The marriage of curry powders fiery burst and the savory richness of duck fat created a unique and delicious sensation. After that I tried a more sophisticated method with Food Networks Shoestring Fries with Truffle Aioli. The gourmet appeal of this dish was at once apparent, and I was eager to sample the deep flavors of garlic and truffle. Cutting the potatoes into perfect shoestrings and frying them until they were perfectly crispy gave these fries a sophisticated touch that was almost like preparing a fine dinner.

While the potatoes were sizzling, I made a truffle aioli with mayonnaise lemon juice minced garlic and of course the main attraction: truffle oil. The pleasant aroma that the combination created filled my kitchen adding to the entire experience.

It’s almost the end of the year, and next thing you know, it’s going to be Jasper in January Festival again, loaded with fun celebrations and contests like the Poutine Showdown. Are you excited? Well, if you haven’t heard of the Poutine Showdown or want to revisit that yummylicious event, Cameron Jackson and Mason Grossman have got your back. Last January, they went on their self-imposed mission to try 14 local contenders (Jasper, Alberta restaurants) and their poutines. They even picked their own favorites, but they didn’t spill the beans on which one it was!

One standout dish, though, is Jasper Pizza Place’s Poutine Rogan Josh. This dish used crispy shoestring fries loaded with strong flavors—a.k.a. lamb curry with mozzarella, squeaky curds, and cool cilantro. It’s got just enough kick to make the spice noticeable but not so much that it burns your tongue. The flavor and heat balance perfectly. According to one local, the dish is “a warming and deeply flavorful version of the Canadian poutine,” proving how strong spicy sauces can pair beautifully with shoestring fries. This fusion-style creation shows how versatile Alberta’s shoestring fries can be in reinventing classic dishes.

There are other daring and flavorful poutine variations, like Raven Bistro’s Wild Game Poutine, made with rich gravy from bison, elk, and beef stock, and Adobo Beef Brisket with Coconut Milk, a Filipino-inspired poutine. Although these dishes are creative and push the limits of poutine, the Poutine Rogan Josh stands out because it highlights how shoestring fries’ crisp texture pairs perfectly with creamy, spicy sauces.

All in all, Jasper in January’s Poutine Showdown showcases how Canadian food is ever-evolving. Even a traditional dish like poutine can be given fresh, bold twists. Shoestring fries, especially those from Alberta, continue to play a crucial role in adding excitement to these dishes.

The best picnic spot to enjoy your shoestring fries!

Fred John’s Park in Leduc, Alberta, is my favorite picnic spot, perfect for unwinding and relaxing with a side of savory shoestring fries (my ultimate snack!). This beautiful park boasts a variety of amenities, including playgrounds, ball diamonds, a disc golf course, and picnic areas. It’s also conveniently located near the Leduc Reservoir, where you can fish or simply bask in the soothing ASMR sounds of nature. It's an ideal destination for a fun and rejuvenating outdoor escape!
